Creamy Prawn Curry

Ingredients

  • 3 tablespoons olive oil
  • 1 cup Organic Chicken Bone Broth
  • 3 cloves crushed garlic
  • 1 medium diced onion
  • 1 teaspoon cinammon
  • 1 teaspoon tumeric
  • ½ teaspoon chili powder
  • ½ teaspoon ground cardamom
  • ½ teaspoon ground cloves
  • 1 teaspoon grated ginger
  • 1 cup coconut cream
  • 1 pound large raw prawns
  • 2 tablespoons chopped cilantro

Method

  1. Place a large saucepan over high heat and add the olive oil, garlic, onion and ginger. Saute for 5 minutes.
  2. Add the spices and saute for approx 3 minutes, until fragrant.
  3. Add the coconut cream and bone broth and bring to a simmer, then add prawns.
  4. Simmer for 5-7 minutes, until the prawns are cooked through.
  5. Remove from heat and serve. Enjoy topped with the chopped cilantro and a side of cauliflower rice.
