Ingredients
- 1 diced medium onion
- 1 diced bell pepper
- 4 finely chopped garlic cloves
- 2 tsp paprika
- 1 tsp cumin
- 1/4 tsp chili powder
- 1 large can whole tomatoes drained
- 6 eggs
- 2/3 cup Organic Chicken Bone Broth
- 1 small bunch chopped fresh cilantro
- 1 small bunch chopped fresh parsley
- salt and pepper
Method
- Heat olive oil in a large pan over medium
- Add the bell pepper and onion and cook for 5 minutes
- Add garlic and spices and cook an additional minute
- Pour the can of tomatoes and broth into the pan and break down the tomatoes using a large spoon
- Season with salt and pepper and bring the sauce to a simmer until it thickens
- Use spoon to make small wells in the sauce and crack the eggs into each well
- Cover the pan and simmer 5 minutes, or until the eggs are done to your liking
- Garnish with chopped cilantro and parsley
