Bone Broth Mac and Cheese (Gluten-Free)

Ingredients

  • 3 cups gluten free macaroni
  • 1/3 cup butter or ghee
  • 1 tablespoon tapioca starch
  • 1 cup milk
  • 1 cup chicken bone broth
  • 2 cups grated cheddar cheese
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Method

  1. Cook macaroni according to package directions, drain and set aside.
  2. In a large skillet, melt butter over medium heat. Add tapioca starch and onion powder and simmer for about 30 seconds.
  3. Whisk in the milk and bone broth and continue to simmer approximately 5 minutes until mixture thickens.
  4. Add grated cheese and stir until melted. Remove pan from heat and stir in macaroni, salt and pepper.
  5. Serve while hot with a garnish of chives or bacon bits for extra flavor if desired!
