Bone Broth Mac and Cheese (Gluten-Free)

Ingredients
- 3 cups gluten free macaroni
- 1/3 cup butter or ghee
- 1 tablespoon tapioca starch
- 1 cup milk
- 1 cup chicken bone broth
- 2 cups grated cheddar cheese
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Method
- Cook macaroni according to package directions, drain and set aside.
- In a large skillet, melt butter over medium heat. Add tapioca starch and onion powder and simmer for about 30 seconds.
- Whisk in the milk and bone broth and continue to simmer approximately 5 minutes until mixture thickens.
- Add grated cheese and stir until melted. Remove pan from heat and stir in macaroni, salt and pepper.
- Serve while hot with a garnish of chives or bacon bits for extra flavor if desired!
